Abstract:
In a typical embodiment of the present invention, a sharpener assembly which is mountable on a food slicer and a base assembly is provided. The sharpener preferably includes two abrasive stones (52A, 52B) which opposingly engage the front and rear sides or faces of the knife (102) simultaneously to grind and hone a fine edge of the knife. The main abrasive stone (52A) is on the back side of the knife (102), i.e., the side opposite the food, and comprises a circular or disc-shaped abrasive stone mounted for rotation on a shaft. A similar abrasive stone (52B) carried on another shaft acts as a truing stone and comes into contact with the front-side of the knife (102) to debur the sharpened knife edge.
