Provided are a signal conversion circuit, a heart rate sensor, and an electronic device. The signal conversion circuit comprises: a photoelectric conversion circuit for converting an optical signal into a current signal, wherein the current signal comprises, in a first phase, a useful optical signal, a modulated optical signal, and a signal converted from a background optical signal in the optical signal, and the current signal comprises, in a second phase, a signal converted from the background optical signal; a differential signal conversion circuit, which is connected to the photoelectric conversion circuit and is used for converting the current signal into a first differential signal and a second differential signal, wherein the first differential signal is an integrated signal when the current signal is in the first phase, and the second differential signal is an integrated signal when the current signal is in the second phase; and the subtraction amplifier, which is connected to the differential signal conversion circuit and is used for amplifying the difference between the first differential signal and the second differential signal so as to generate a third differential signal. The signal conversion circuit of the embodiments of the present invention can effectively suppress environmental interference.
