Abstract:
Labor saving is attained by mechanically automating the skinning work of the meat with skin of a meat-use live stock carcass, hygienic aspects are improved by disusing manual work, and skinning thickness is made uniform. The skinning method comprises a step for suspending and positioning a carcass (W) with skin by a clamp device (10) and inserting a vibration stop rod (81) into the lower portion of the carcass with skin such that the carcass with skin can turn about the clamp device and the vibration stop rod, a step for securing a cutter device (30) to the carcass with skin by making a pawl 35a provided on the roller surface of a skin feed roller (35) of the cutter device (30) bite into the carcass with skin, and a step for performing skinning with a straight sword (36) provided in the cutter device while rotary driving the carcass with ski with a driving force produced by rotating the skin feed roller of the cutter device by a servo motor (34).
