Abstract:
The purpose of the present invention is to provide a snack having a texture that accords with consumer preferences and a method for producing a snack without using any oil so as to accord with consumer health trends. To this end, a raw material is formed into a desired thickness, a desired size, and a desired shape, the formed material is gelatinized by means of blanching at a predetermined temperature for a predetermined time, the blanched material is dried to a predetermined water content, the dried material is puffed by heating/pressurizing at an appropriate temperature and an appropriate pressure, the puffed material is seasoned with a viscous polysaccharide, and the seasoned material is baked.
