Abstract:
Disclosed are: a solid composition which has excellent storage stability and provides sufficient saltiness as an alternative for salt in a low-salt or salt-free food or drink; a food or drink which contains the composition; and a method for reducing salt to be contained in a food or drink, wherein the composition is used.
Specifically disclosed is a solid composition which contains (A) a mixture that contains lactic acid and calcium lactate, (B) an ammonium salt and (C) a substantially non-reducing sugar.
