Abstract:
Provided are a solid food having appropriate stickiness and easily manageable strength and a solid milk. This solid food, which is a solid form food obtained by compression-molding a food powder, contains monohydrate crystals and anhydrate crystals, wherein: when an increase in crystallinity, which is the difference between the ratio of the monohydrate crystals on the surface of the solid food to the total weight and the ratio of the monohydrate crystals inside the solid food, is referred to as α (wt.%) and an increase in crystallinity, which is the difference between the ratio of the anhydrate crystals on the surface of the solid food to the total weight and the ratio of the anhydrate crystals inside the solid food, is referred to as β (wt.%), then the increase ratio of crystallinity, which is represented by the ratio of the increase in the crystallinity β (wt.%) to the sum of the crystallinity increases (α+β), i.e., β/(α+β), is 0.15 or more; and the peeling shear stress on a flat surface is 0.020 N/mm2 or less.
