Abstract:
Provided are: a sourness enhancing agent capable of enhancing sourness when being added to seasonings, food, or the like; and a sourness enhancing method. The present invention pertains to: a sourness enhancing agent including, as active ingredients, oxidized fats and oils which have a peroxide value of 15-180 and which include 10-100 mass% of a milkfat; seasonings and food in which the sourness is enhanced by adding the sourness enhancing agent; and a method for enhancing the sourness of seasonings and food by adding thereto oxidized fats and oils which have a peroxide value of 15-180 and which include 10-100 mass% of a milkfat.
