Abstract:
Disclosed are a tofu (soybean curd)-like food and soy milk containing a fibrous material, each of which has good texture and flavor and enables the simultaneous intake of almost all of nutritional components contained in soybeans, such as proteins, lipids, saccharides, fibrous materials, minerals, vitamin components and isoflavone compounds.
Also disclosed is a process for producing soy milk containing a fibrous material, which comprises the steps of: (A) dissolving and dispersing a dehulled soybean powdery material having a water-soluble nitrogen index of 75 to 90 inclusive, a lipoxygenase value of 30 to 120 inclusive, an n-hexanal content of 0.5 to 2 ppm inclusive and a peroxide value of 0.2 to 3.0 meq/kg inclusive in water to prepare a dispersion; (B) heating the dispersion at 120 to 160˚C for 1 to 600 seconds; and (C), subsequent to step (B), cooling the dispersion to 100°C or lower and subjecting the resulting dispersion to an emulsion dispersion treatment under a pressure of 25 to 200 MPa to produce the soy milk containing a fibrous material.
