Abstract:
Provided is a method for producing a soymilk whereby a soymilk can be produced without discarding okara (bean curd refuse).  According to this method, a soymilk which remains stable over prolonged storage and has a good value as a drink can be produced.  Soy flour is mixed with a solvent and the liquid soy mixture thus obtained is passed through a small pipe under a pressure of 60 MPa or above and/or at a flow rate of 130 m/sec or above to thereby pulverize the soy flour in the liquid soy mixture.  After the completion of the pulverization step, it is preferable that the average particle diameter of the solid matters in the soymilk is 20 μm or less and the standard deviation thereof is 0.35 or less.  Also, it is preferable that the cross-sectional area of the channel in the small pipe is 1 mm2 or less and the length in the longitudinal direction of the small pipe is 3 mm or more.
