Abstract:
[PROBLEMS] To remove the spine from a block meat with a good yield in terms of the amount of meat and with goof efficiency in terms of time. [MEANS FOR SOLVING PROBLEMS] A method comprising the steps of detecting the position and shape of the spine in a block meat having at least part of the spine, three-dimensionally controlling the attitude of a cutter (30) on the basis of data on the detected position and shape of the spine so as to cut the block meat in the vicinity of the spine in V-shape from two directions, and removing the spine from the block meat.
