Abstract:
Stabilizers for anthocyanin-rich compositions containing at least 1% by weight of anthocyanin based on the solid matters which comprise phytic acid optionally together with sugars and/or sugar alcohols; a method of stabilizing the above-described anthocyanin-rich compositions which comprises adding phytic acid optionally together with sugars and/or sugar alcohols thereto; the above-described anthocyanin-rich compositions thus stabilized; stabilizers for foods, drinks or drugs containing the above-described anthocyanin-rich compositions which comprise phytic acid optionally together with sugars and/or sugar alcohols; a method of stabilizing drinks, foods or drugs containing the above-described anthocyanin-rich compositions which comprises adding phytic acid optionally together with sugars and/or sugar alcohols thereto; and drinks, foods or drugs containing the above-described anthocyanin-rich compositions having been stabilized which further contain phytic acid optionally together with sugars and/or sugar alcohols.
