The present invention can operate energy efficiently and economically by reducing running costs according to amount of harvest when the amount of harvest is reduced, or when the amount of harvest is increased, can flexibly respond to the conditions of the increased harvest by gradually increasing the processing capacity. A steam heat processing device for fruits and vegetables (1) has a continuous plurality of processing chambers (20) therein by linking a plurality of equipment units (1U) and is provided with a transport path (24) along the plurality of processing chambers (20). An inlet door unit (1A) is provided on one end side of the plurality of linked equipment units (1U), and an outlet door unit (1B) is provided on the other end side. A dividing wall (26) that partitions the processing chambers for each of the equipment units (1U) is provided on each of the upper side and lower side of the transport path, and the wall (26A) provided on the upper side of the transport path (24) is freely openable and closable. Each equipment unit (1U) is provided with a steam heat flow generating means (50), and a control unit (60) that individually controls the operation of the steam heat flow generating means (50) in each equipment unit (1U) is provided.
