Abstract:
Provided is stick-shaped baked confectionery produced by shaping a dough into sticks, said dough comprising, per 100 parts by mass of at least one member selected from the group consisting of starch and wheat flour, 15-80 parts by mass of a tasty material, 5-45 parts by mass of active gluten and 0.15-1.7 parts by mass of an emulsifier, and baking, wherein: the tasty material is at least one member selected from the group consisting of cocoa powder, potato granules, nut powder, wheat bran, coffee, powdered green tea, black tea, rice flour, corn powder, whole wheat powder, millet, Japanese millet, European millet, amaranth and fruit materials; and the emulsifier comprises at least one member selected from the group consisting of a sucrose fatty acid ester having an HLB of 11-20 and a polyglycerol fatty acid ester having an HLB of 11-20.
