Abstract:
It is intended to provide a dried vegetable which is excellent in hot water rehydration, has a good shape, color and flavor in a rehydrated vegetable and is useful as an ingredient of an instant food and drink, a prepared food ingredient or the like, a method for producing the same and use thereof. The object is solved by providing a sugar-containing dried vegetable which is obtained by subjecting a vegetable to a sugar-permeation treatment followed by hot-air drying and satisfies the following physical conditions: 1) the dry mass of a residue obtained by subjecting the sugar-containing dried vegetable to an extraction treatment with a 60% aqueous ethanol solution is 15% or more and less than 35% of the mass of the sugar-containing dried vegetable; and 2) the specific gravity of the sugar-containing dried vegetable increases by 0.1 or more compared with a dried vegetable without the sugar-permeation treatment and is more than 1.0 and less than 1.5, and a method for producing the same.
