Abstract:
Disclosed is a support (1) for food, especially baked goods, comprising a fabric whose warp threads and weft threads (5, 6) consist of reinforced filaments, such as glass, aramide, or carbon, which are impregnated or coated with fluoropolymers. The inventive support (1) counteracts the negative influence of germs on food while substantially lowering cleaning costs and extending the shelf life of the food by a multiple compared to previously known supports. The inventive support (1) ensures proper passage of air, heat, and moisture, which is important for fermenting processes in bakeries also with regard to energy efficiency. Unlike conventionally used plastic materials and plastic fabrics, the inventive fabric does not embrittle during sterilization by means of UV radiation, a step that is integrated in the production process.
