Abstract:
The present invention relates to a sweetener containing an enzyme-treated stevia composition and having improved sweetness, the sweetener being characterized by containing 90 wt% or more of steviol glycoside. The present invention can provide an enzyme-treated stevia sweetener and a product using the same, wherein enzyme-treated stevia is produced by simply performing only a sugar addition reaction without a purification procedure using an existing porous adsorption resin (aromatic-based or styrene type) while cyclodextrin is used as a glycosylation material of a stevia extract (steviol glycoside), and allowing the enzyme-treated stevia to be used as an ingredient and a reagent for a sweetener, a flavor enhancer, and a flavor modifier in a variety of confectionery, beverages (including alcoholic beverages), food, products, and the like.
