Abstract:
In the present invention: insoluble matter is removed from a protein hydrolysate solution obtained by hydrolyzing a grain protein; treatment that causes the precipitation of a hydrophobic amino acid is performed; and the precipitate recovered from the solution is added to orally ingested compositions such as food products or pharmaceuticals, as a taste-modifying material to improve the taste thereof.
