Abstract:

The problem is to provide an α,α-trehalose dihydrate crystal-containing powder having excellent emulsifying capacity; and the problem is solved by providing an α,α-trehalose dihydrate crystal-containing powder comprising particles containing α,α-trehalose and maltose and/or maltotriose, wherein the α,α-trehalose dihydrate crystal-containing powder contains 70-90 mass% of α,α-trehalose in terms of anhydride and contains a total of 3 mass% or more of maltose and/or maltotriose in terms of anhydride, and the degree of crystallization of the α,α-trehalose dihydrate crystals calculated on the basis of the powder x-ray diffraction profile is 25% to less than 90%.
