Abstract:
Disclosed is a tyrosinase inhibitor which has excellent tyrosinase-inhibiting
activity, is safe and inexpensive, and is useful as a pharmaceutical, a cosmetic,
a food or a food additive. The tyrosinase inhibitor comprises a triacyl glycerol
represented by the general formula (1) as an active ingredient.
(1) wherein R1, R2 and R3 independently
represent a linear fatty acid residue having 10 to 18 carbon atoms.
