A vacuum spray freeze granulation apparatus and method. The apparatus comprises: a container (1) used for containing products during a vacuum spray freeze granulation process; an atomizing nozzle (2) used for atomizing and dispersing a liquid to be freeze-dried into liquid drops and spraying the liquid drops into the container (1); and a vacuum system used for creating a vacuum environment in the container (1) to make some of the components of the liquid drops be vaporized and absorb heat in the vacuum environment to cool and freeze the liquid drops into granules. The method comprises: use the vacuum system to carry out vacuum pumping on the container (1) to a certain vacuum degree; then use the atomizing nozzle (2) to atomize and disperse a liquid to be freeze-dried into liquid drops and spray the liquid drops into the container (1); some of the components of the liquid drops are vaporized in the vacuum environment and absorb heat to cool the liquid drops; a condensing means condenses the vaporized components of the liquid drops to maintain the vacuum degree of the container (1); the temperature of the liquid drops keeps dropping until the liquid drops are frozen into granules.
