Abstract:
The present invention relates to: a method for producing a vinegar having a high acid degree with higher efficiency compared with the conventional methods; and a vinegar having a high acid degree, which is produced by the method. The method according to the present invention is characterized in that the acetic acid fermentation is carried out using a culture solution that contains a compound having a thiol group or an S-substituted derivative thereof or a compound having a disulfide bond and has a total nitrogen content of 0.023 w/v% or less. According to the method of the present invention, it becomes possible to produce a vinegar having a high acid degree, wherein the vinegar has a total nitrogen content of 0.015 w/v% or less and an acid degree of 10 to 25 w/v%, and contains a compound having a thiol group or an S-substituted derivative thereof or a compound having a disulfide bond in an amount of 17 μM or more in terms of the content of sulfur atoms contained in the thiol group or the disulfide bond.
