Abstract:
A walnut fermented milk and a preparation method therefor. The method comprises the following steps: 1) roasting skinless walnut kernels at 145-165°C for 5-25 min; 2) performing deoiling treatment on the roasted walnut kernels until the oil content of the roasted walnut kernels is 20-50%, so as to obtain semi-defatted walnut kernels; 3) mixing the semi-defatted walnut kernels with a stabilizer, a carbon source and water and then pulping to obtain walnut pulp; and 4) fully mixing the walnut pulp and then sterilizing, inoculating and fermenting. By means of the method, the scent of walnuts can be effectively improved by roasting the walnuts at a high temperature. On this basis, a desirable flavor of a system can be ensured after part of oil is removed, and a fermented milk that is stable in quality and rich in nutritional value can be obtained by removing the oil to the above extent.
