A water path system of a water softener, a salt dissolving control method and the water softener. The water path system of the water softener comprises: a salt box (11); a salt dissolving water path (101) having a water inlet end and a water outlet end respectively communicated with the salt box (11) to form a circulating salt dissolving loop; a water pump (16) provided in the salt dissolving water path (101) and used for extracting brine in the salt box (11) and flowing same via the salt dissolving water path (101); and a first detection unit (35) provided in the salt dissolving water path (101) and used for detecting the salt concentration of a solution passing through the salt dissolving water path (101). The salt concentration of the solution can be monitored in the salt dissolving process, and it is guaranteed that each salt dissolving can reach the preset salt concentration in the shortest time, and the salt can be saved to a certain extent.
