Disclosed are a wheat flour cleaning method for peeling off the pericarp only, and a complete set of equipment implementing the method. The method comprises four processes, namely, cleaning and peeling of raw wheat, and cleaning and tempering of peeled wheat, where the peeling process consists of a damping process and a stirring process. In the method, only most of the pericarp is peeled off, while the seed coat is basically undamaged. This greatly reduces the probability of the seed coat being grinded into gluten powder and then mixed into wheat flour, thereby reducing the ash content in the wheat flour. The complete set of equipment obviates a washer, thus conserving water resource and preventing water pollution.
