Abstract:
Provided is a whipped cream improving agent, wherein the content amount of vegetable oil included in the fats and oils of the whipped cream is 10-100 mass% inclusive per the total amount of fats and oils, and one or more types of starches, selected from high amylose content starches having an amylose content of at least 55% and processed high amylose content starches, are contained as active ingredients. Also provided are a whipped cream containing said starch, and a cream for whipped cream.
