Abstract:
A whole-wheat barrel-aged strong Lager beer, the alcohol degree of the whole-wheat barrel-aged strong Lager beer is 10% vol to 12% vol, the bitterness is 20 BU to 60 BU, the original wort concentration is 22° P to 25° P, the real fermentation degree is greater than or equal to 70%, the carbon dioxide content is 0.50% mass to 0.65% mass, the dimethyl furanone content is 4 mg/L to 6 mg/L, the cis-oak lactone content of 300 μg/L to 500 μg/L, the vanillin content is 10 mg/L -20 mg/L, and the appearance is amber. The preparation process comprises performing barrel aging, filtering, carbonation, stabilizing, and filling on a whole-wheat strong Lager beer.
