Abstract:
Foods containing &gammad −glutamylcysteine or cysteine are produced by culturing under appropriate conditions a yeast, which carries a mutant glutathione synthase having one or both of mutations of substituting the threonine residue at the 47−position by an isoleucine residue and substituting the glycine residue at the 387−position by an aspartate residue and produces &gammad −glutamylcysteine, adding the thus obtained culture, which has been optionally fractionated and&sol or heated, to food materials and then processing the materials into food products.
