To provide a particle production method which can simultaneously produced particles at a plurality of spots in a minute channel, produce the particles in combination of various dispersed phases and a continuous phase, and correspond to industrial mass production and a minute channel structure.

In the method, while the continuous phase and at least two dispersed phases are introduced continuously into a structure having the minute channel, the continuous phase and the dispersed phases are brought into contat, and the dispersed phases are sheared into minute particles. The minute channel structure is used in the method.
