Abstract:
It is intended to provide a wort and a malt extract each having an extremely large GABA content, a process for producing the same and a nonalcoholic drink or food containing the same. That is, a wort containing 90 mg or more of GABA per 100 g of soluble solid matters; a malt extract characterized by containing 90 mg or more of GABA per 100 g of soluble solid matters; a process for producing the same; and a nonalcoholic drink or food containing the same.
