PROBLEM TO BE SOLVED: To provide a bakery food mixture enabling producing a bakery food which has resilient palate feeling and is excellent in aging resistance.SOLUTION: A bakery food mixture includes raw material powder containing 15-80 mass% of one kind or two kinds or more selected from the group consisting of tapioca starch, starch derived from waxy, and cereal powder derived from waxy, and 1) or 2) as follows: 1) one kind or two kinds or more selected from the group consisting of enzyme-treated lecithin, enzyme-treated whole egg, and enzyme-treated egg yolk; and 2) phospholipid hydrolytic enzyme, and one kind or two kinds or more selected from the group consisting of whole egg and egg yolk.SELECTED DRAWING: None
