To provide an acidic drink which contains Tofu (bean curd) puree and has an improved texture and an improved flavor.
This acidic drink containing bean curd puree is characterized by formulating the bean curd puree having physicochemical properties: (a) a viscosity of 20 to 3,000 mPa.s, (b) a dynamic storage elastic modulus of 0.2 to 600 Pa, (c) a dynamic loss elastic modulus of 0.2 to 250 Pa, and (d) an average particle diameter of 2 to 15 μm and 90% particle diameter of particles of ≤35 μm contained in the bean curd puree, respectively, as a raw material. Thereby, the new type acidic drink having the improved texture and the improved flavor which can not be expected by conventional products and does not cause the separation of components during storage can be provided.
