Abstract:

To provide tea leaves with reduced caffeine content, capable of being taken by a large amount for a long time as an antiallergic beverage or food.

A method for producing tea leaves is provided by immersing any of raw leaves of "Benifuuki", "Benifuji", "Benihomare", "Okumidori", "Kanayamidori", "Surugawase", "Benihikari", "Yamakai", "Yutakamidori", "Seisindaipan", "Seisin oolong" and "Ohba oolong" in 85-95°C warm water for 30 sec to 2 min, dehydrating, passing through processes of steaming, crude crumpling, crumpling/twisting, middle crumpling and fine crumpling or eliminating the fine crumpling process to make crude tea.
