PURPOSE: To obtain the subject strain surviving by refrigeration storage without developing the activity and exhibiting dough raising property at 13-14°C by subjecting a specific haploid to mutagenic treatment, selecting a mutant having lti property and crossing the strains.
CONSTITUTION: The objective baker's yeast strain having lti property (low temperature inactive property) is produced by mutating a haploid strain of Saccharomyces cerevisiae, selecting a mutant having lti property, crossing with a wild haploid of Saccharomyces cerevisiae having opposite mating type, selecting two or more backcrossed segregants having lti property and opposite mating type, crossing the strains and selecting the produced diploid cell having latent growing potency, lti property and dough raising ability.
