Abstract:
PURPOSE: To obtain a beverage such as coffee or black tea retaining its flavor and taste, by incorporating coffee or black tea with each specific vegetable oil and aroma to enable hot sterilization thereof under milder conditions.
CONSTITUTION: A beverage such as coffee, black tea or green tea is formulated with (A) a milk fat-gustatory vegetable oil and (B) an aroma furnishing milk flavor and ensured not to add nitrogen ingredients serving as the nutrient for microbes. Thereby, hot sterilization conditions for the beverage can be made milder such as at 121°C for 5min or so.
