Abstract:

PURPOSE: To obtain a moist and good-quality bread having excellent keeping quality and keeping soft property also after preservation, by fermenting dough containing MAJIPAN (pulverized blend consisting of nuts and/or beans, sugars and water) of a specific amount based on wheat flour in bread dough and baking the dough.

CONSTITUTION: A dough containing MAJIPAN (pulverized blend consisting of nuts and/or beans, sugar and water) of 5W40 pts.wt. based on 100 pts.wt. wheat flour in bread dough is fermented and baked to provide the aimed bread.
