Abstract:

To provide a food comprising mainly a soybean protein by finding a material of soybeans to afford a tasty food even when wheat flour is replaced with the soybean protein having nutritionally excellent characteristics in the food of the type of baked wheat flour which is a usual food readily ingestible by humans.

This raw material wheat flour for the wheat flour baked food is replaced with a low-modified concentrated soybean protein having ≥40 nitrogen solubility index (NSI) and ≤2.0 wt.% of solids extracted with a mixed solvent of chloroform and methanol in 2:1 chloroform:methanol ratio and ≥63% crude protein. Thereby, the resultant dough is baked to afford the easily eatable food comprising mainly of the soybean protein having a good flavor.
