PURPOSE: To obtain the subject food, capable of promoting effective utilization of vegetable fiber by puffing a kneaded material of dietary fiber and water, granulating the kneaded material and enriching the nutrition of another food by adding thereof to the aforementioned food.
CONSTITUTION: The objective food is obtained by adding water and one or more of corn starch, corn flour and corn grits in an amount so as to provide 40-60wt.% thereof based on the aforementioned dietary fiber (especially bean- curd refuse), and kneading the resultant mixture in an extruder having two-axle screws, while heating and pressurizing the mixture, extruding the mixture through an orifice while puffing the mixture, cutting the prepared kneaded mixture and granulating the cut material. Furthermore, the aforementioned food is added to a bread dough before fermentation to afford bread enriched with nutrition.
