Abstract:

To provide gummy candy containing fruit juice having flavor inherent in raw material fruit and high palatability, vegetable juice, dairy products and the like in order to recover the dull tone of the demand for gummy candy.

The method for producing gummy candy comprises the following processes: blending sugar solution and at least any one not containing a thermally denaturated compound, of fruit juice, vegetable juice and a dairy product; boiling up the mixture followed by charging a mixing and stirring machine with the sugar solution and gelatine; cooling the mixture down to have ≤50°C while mixing and stirring the mixture, thereafter adding at least any one not containing a thermally denaturated compound, of fruit juice, vegetable juice and a dairy product; and mixing the materials followed by a process of removing a starch mold from the mixture.
