To provide a heat exchanger for effectively absorbing expansion and contraction in accompany with temperature rise by a heat medium, ensuring high sanitary performance, and being easily disassembled to check and clean the inside.
In this heat exchanger structure for a fluid product having an outer pipe 10 and an inner pipe 11 having a diameter smaller than that of the outer pipe 10 and disposed in the outer pipe 10 along the axial direction, high-viscosity fluid is circulated between the inner pipe 11 and the outer pipe 10, the heat medium capable of exchanging heat with the high-viscosity fluid is circulated in the inner pipe 11, and a heat medium circulating section 12 for circulating the heat medium exchanging heat with the high-viscosity fluid product circulated between the outer pipe 10 and the inner pipe 11, is disposed on a peripheral face section of the outer pipe 10. The inner pipe 11 is detachably fixed to an axial end section of the outer pipe 10 through a joining member 26 capable of absorbing expansion and contraction in the axial direction and avoiding exposure to the outside air.
