Abstract:

To prepare a high-quality bread, etc., by combining steaming and baking.

In a baking method, a lump 110 of kneaded powder is placed on an almost horizontal holding surface equipped with one fine hole 102 at least so as to cover the fine hole 102. The holding surface is put into a heated enclosure together with the kneaded powder lump and the holding surface and the headed powder lump are left in the enclosure for prescribed time. At least during a part of this time, steam is supplied through the fine hole 102 so that a part of steam is infiltrated through the lower surface of kneaded powder lump into the kneaded powder lump at least. This method can be executed in a batch type baking process or a continuous conveyer process.
