Abstract:

PURPOSE: To provide the method for holding the sterilized and cooked food in an aseptic state and conveniently producing the whole body of the sterilized and cooked food.

CONSTITUTION: When a food is heated, sterilized and dried, a vacuum pump 20 is operated to remove air left in a pressure container 2, and hot air sterilized and heated with a heater 24 is charged from a nozzle 4. After a material 5 to be sterilized is heated with the hot air, the charging of the hot air into an inner can 2A is stopped, and air left in the inner can 2A and in the material 5 is discharged. After the air left in the inner can 2A and in the material 5 are discharged, saturated stream whose water drops are removed with a steam filter 32 is charged from a steam generator 6 into the inner can 2A, while the inner pressure of the inner can 2A is held at a higher pressure only by 0.2-0.3kg/cm2 than a preliminarily determined pressure at a preliminarily determined temperature. In discharging and drying processes, a lower side discharging motor-driven valve 38 and an upper side discharging motor-driven valve 30 are automatically opened or closed to exchange steam in the inner can 2A with dry air to lower the temperature in the inner can 2A.
