Abstract:
PROBLEM TO BE SOLVED: To provide a manufacturing method of a doughnut capable of stably conducting diving fry using a continuous type flyer, and a mix for doughnut used for the manufacturing method of the doughnut.SOLUTION: There are provided a manufacturing method of a doughnut where a fry process is conducted by using a continuous type flyer 30 having a transportation means with a long-sized oil tank 31 accommodating a fry oil 21 and a diving conveyor 33 which transports a doughnut dough 12D floating in a liquid level of the fry oil by pressing from the above to dive in the fry oil, and a blend of a raw material powder of the mix for doughnut and an expansive agent is set so that the doughnut dough 12A submerges in the fry oil just after inputting in the fry oil 12B and floats in the liquid level of the fry oil after lapse of 9.0 to 13.0% of total fry time 12C, the raw material powder used in the manufacturing method and the mix for doughnut containing the expansive agent.SELECTED DRAWING: Figure 1
