Abstract:
PROBLEM TO BE SOLVED: To provide a yeast extract having masked or reduced yeast original off-flavor (yeast odor), excellent in taste balance and long lasting and exhibiting meat extract-like taste.SOLUTION: The invention provides a lactate-containing yeast extract containing lactate of 7.5 (w/w)% or more per a yeast extract solid content. Also there is provided a lactate-containing yeast extract containing lactate of 7.5 (w/w)% or more per a yeast extract solid content, where lactate extract is obtained by fermenting lactic acid bacterium.SELECTED DRAWING: None
