PURPOSE: To provide a low-calorie fat having a good taste and suited for use as the raw material of foods, beverage, etc., by forming the same from a mixture of triglycelides containing a combination of a medium-chain fatty acid and a long-chain fatty acid.
CONSTITUTION: This fat has (A) one kind or more selected from MML, MLM, LLM, and LML triglycelides, about 15(wt)% or more, where M is a C6-10 saturated fatty acid and L is a C17-26 saturated fatty acid, and (B) a fatty-acid composition containing a mixture of MML triglycelide and MLM triglycelide by about 10% or more, with M, 15 to 70%, L, 10 to 70%, C120 and/or C140 fatty acid, 10% or less, one kinds or more of fatty acids selected from C181, C182, C183, 20% or less, and a C182 fatty acid, 4% or less. Such a fat achieves a 10% or more calorie reduction as compared with corn oil.
