Abstract:
To provide lycopene that has high lipophilicity and hardly dissolves in a solvent usable to foods such as ethanol and isopropyl alcohol, as a food material efficiently obtained from a source of supply of lycopene.SOLUTION: A lycopene-containing composition is efficiently obtained by extracting lycopene with a mixed solvent containing a fat and oil having a high palmitic acid content, particularly palm oil and ethanol. Further, the lycopene-containing composition is subjected to saponification treatment with an alkaline solution, and lycopene is precipitated by decomposing the oil and fat. The obtained precipitate is washed with ethanol and water so as to obtain a powdery lycopene-containing composition having an increased lycopene content by using only a solvent which can be ingested as a food, thereby solving the above problem.SELECTED DRAWING: None
