To perform efficient manufacture by shortening the drying process for dried persimmons and to provide the dried persimmons of a high quality.
The process of initial drying for drying peeled persimmons is performed under a high temperature (25-45°C) higher than a normal temperature (20°C) and high humidity (65-90%). Through the initial drying, moisture is uniformly and smoothly withdrawn from the entire persimmons and astringency removal is simultaneously and efficiently performed. The drying is performed for 24-36 hours and thereafter, latter term drying by air drying is performed. Thus, the drying process is shortened to 1/2-1/3 time compared to a conventional method. Also, by performing the initial drying under an ozone atmosphere, sulphur-funigation before drying is omitted, the astringency removal is sufficiently performed and the dried persimmons of excellent quality are obtained.
