PURPOSE: To provide the material useful for health food/beverage, containing, as the main ingredient, hemicellulose extracted from cacao bean periderm.

CONSTITUTION: The material containing, as the main ingredient, hemicellulose extracted, using an alkaline solution, from cacao bean periderm (optionally, pretreated, i.e. impurity degradation using an enzyme such as amylase), a by- product from chocolate production process.
