Abstract:
To provide a method of coloring easily on the surface of a gel-like food.SOLUTION: We have found that the surface of a gel-like food can be beautifully colored by: causing a metal ion having a valence of 2 or more to exist on the surface of a gel-like food; and, thereto, applying an aqueous solution containing a gelling agent that reacts with colorant and metal ion having a valence of 2 or more to gelate, and completed the invention. In order to cause a metal ion having a valence of 2 or more to exist on the surface of a gel-like food, there are a method of kneading an ingredient that becomes a metal ion having a valence of 2 or more into a gel-like food itself, and a method of applying an aqueous solution containing a metal ion having a valence of 2 or more on the surface of a gel-like food.SELECTED DRAWING: None
