Abstract:

PURPOSE: The mild sterilized by heating is rapidly cooled under vacuum and at the same time the water is vaporized under vacuum, whereby the cooling and concentration operations are done at the same time.

CONSTITUTION: After milk just squeezed is homogenized with a homogenizer, it is sterilized by heating at a temperature of higher than 55°C and then made to flow down in thin layer or sprayed to effect vacuum evaporation. Thereby the high- temperature milk is given the evaporation area as broad as possible to effect the autogenous evaporation of water as well as self-cooling.
