Abstract:

To provide a method for cooking a fry by which an edible oil can powerfully and effectively be prevented from being oxidized even in a large amount and a device therefor.

A couple of applying electrodes 3A and 3B and an earthed electrode 3C are arranged in the edible oil and DC voltage is alternately applied to the applying electrodes 3A and 3B by being transferred to high-frequency AC. The method comprises installing a high-frequency oscillator 19 applying high-frequency signal to a high-frequency converting command circuit 18 and a controlling circuit 20 connected with the high-frequency oscillator 19 and building a variable signal generator thereinto, applying the output controlling signal therefrom to the high-frequency oscillator 19 to control and vary oscillating frequency, making the high-frequency converting command circuit 18 apply converting command from the high-frequency oscillator 19 to the primary and secondary high-frequency switches 12A and 12B, forming AC by making the primary and secondary high-frequency switches 12A and 12B on-off and applying AC voltage between the applying electrodes 3A and 3B.
